A New Twist on a Classic

This special microlot comes from the legendary Idido Gersi washing station in the heart of Yirgacheffe. While the region is famous for its classic natural coffees, this one takes it to a whole new level. It goes through a natural process with an extended cherry fermentation, where they add yeast cultures to the fermentation tank. This clever technique amps up the coffee's natural flavours, creating a cup that's both wild and wonderfully refined.

 

The Terroir of Yirgacheffe

Grown by smallholder farmers in the Idido village, this coffee benefits from the perfect conditions of the Yirgacheffe region. The combo of high altitudes (1,900 to 2,200 metres above sea level), lush soil, and generations of local know-how creates the ideal environment for coffee to thrive. The indigenous Heirloom varietals, which grow wild in Ethiopia, are what give these coffees their unique flavour.
