This year, our limited-release dragon fruit co-ferment returns with an entirely new personality. By applying this processing method to a refined Pink Bourbon lot, the result is a remarkably expressive cup.

This year’s harvest transitions into a vibrant profile of lush mango and tart pomegranate, while retaining its signature wild, sweet, fruit-punch character. It is an adventurous, deeply layered coffee designed for seasonal brewing, thoughtful gifting, or a complete upgrade to your daily ritual.

 

Jairo Arcila: A Legacy of Innovation

For over eight decades, the Arcila family has been a cornerstone of Colombian coffee. Since 2015, producer Jairo Arcila has dedicated his focus to alternative fermentation methods, constantly pushing the boundaries of what coffee can taste like.

 

Today, that spirit of curiosity lives on in Armenia, Quindío, where Jairo’s son, Felipe, manages these precise co-fermentation experiments. We have shared several unique lots from the Arcila family in the past, but combining their meticulous processing with a Pink Bourbon varietal has created one of the most expressive and memorable coffees we’ve tasted from them yet.

 

The Process: A Flavour Revolution

The distinct flavor profile of this lot comes from a strict 72-hour dry anaerobic fermentation. During this stage, dried dragon fruit powder was introduced directly to the whole Pink Bourbon cherries.

Keeping the pulp intact allowed the fruit compounds to interact deeply with the coffee's natural sugars during the ferment. Following this infusing period, the coffee was pulped and transferred to raised beds, where it underwent a slow, carefully monitored drying process to lock in its complex sweetness.
