This vibrant lot from Santa Mónica bursts with layers of red fruits - think ripe cherries, juicy raspberries and strawberries and delicate hibiscus florals, all wrapped in a soft, candy-like sweetness reminiscent of cotton candy. The result is an aromatic, expressive coffee that’s both playful and refined, with a beautifully lifted acidity and a lingering, floral finish.

At the heart of this coffee is Jairo Arcila, a third-generation producer from Quindío and a true pioneer of experimental fermentation in Colombia. With decades of experience and an openness to innovation, Jairo has built a reputation for pushing flavour boundaries while staying deeply rooted in tradition. His Santa Mónica farm - his largest estate - is a diverse, thriving ecosystem where coffee varieties grow alongside fruits that often inspire (and quite literally become part of) his processing methods.
About the process
For this Red Fruits lot, Jairo applies a meticulous honey process combined with a 72-hour anaerobic fermentation. During this stage, ripe red fruits like cherry, strawberry and pomegranate are introduced alongside wine yeast, intensifying the coffee’s natural sugars and unlocking a striking aromatic complexity. The result is a cup that feels alive — layered, fruit-forward and unmistakably unique.
