Peachylicious 2.0

This one’s a bit special. Peachylicious 2.0 is exactly what it says on the bag —juicy, fragrant and unapologetically peach-forward. Think peach gummies, apricot jam, ripe nectarine and a soft floral finish. It’s sweet, perfumy and seriously moreish.

 

Grown by Jairo Arcila in Quindío, this lot is a proper showcase of what modern processing can do when it’s done right. Jairo’s been in coffee his whole life, and with the help of his sons (the guys behind Cofinet), he’s taken things to another level—experimenting with varieties, fermentation and flavour in a way that actually makes sense in the cup.

 

The varietal plays a big part here.

Pink Bourbon is known for its soft, juicy fruit and floral edge—clean, expressive and a bit more delicate than your typical Colombian profiles. It’s the kind of variety that lets processing shine without losing clarity, which is exactly what’s happening in this lot.

 

Now add the process.

This Pink Bourbon goes through a 72-hour anaerobic fermentation with wine yeast and fresh peaches added into the mix. It sounds wild, but it works. After that, it’s dried slowly on raised beds with even more peaches layered in, locking in all that juicy character.

 

The result? Loud, but balanced. Fun, but still proper coffee. Limited release, so don’t hang about.
