Jairo Arcila: A Legacy of Innovation

This incredible coffee comes directly from Jairo Arcila, a dedicated third-generation coffee grower in Quindío, Colombia. Jairo's passion for coffee runs deep; after 40 years as a Mill Manager for a major exporter, he retired in 2019 only to dive deeper into his own farms. With the invaluable support of his sons, Carlos and Felipe (the co-founders of Cofinet), Jairo has truly revolutionised his production. They've fine-tuned everything from harvesting and sorting to processing, and introduced exciting, exotic varieties across his farms like Pink Bourbon and Java. Beyond coffee, Jairo's farms are a hub of biodiversity, also cultivating mandarin, orange, plantain, and banana. Jairo enjoys starting the day with a really good breakfast and he loves spending time with his family.

 

The Process: A Flavour Revolution

This microlot, grown at Jairo's Finca Santa Mónica, is 100% Castillo – a resilient and highly productive variety. But what makes this coffee truly sing is its unique processing. The cherries undergo a 72-hour dry anaerobic fermentation with the pulp still on, and here's the secret: fresh peaches and wine yeast are added to the fermentation vessel! This daring step significantly enhances the coffee's complexity. After fermentation, the cherries are pulped and then carefully dried on raised beds, with more peaches placed amongst the coffee to allow the flavours to further develop until ideal moisture content is achieved. It’s this meticulous and innovative process that gives "Peachylicious" its unforgettable character.
