This one is SPECIAL
We are super excited about this coffee. In fact, it’s up there with one of the best coffees we’ve ever had.
A seriously juicy and expressive Rosado from Jorge Mira’s El Jaragual farm in Antioquia, Colombia. Think ripe mango, passionfruit, delicate florals and strawberry ice cream - bright, tropical and ridiculously delicious.
And yes, we are a little obsessed with it.
Coffee, forest and a whole lot of care
El Jaragual is a 150-hectare family-run farm in the northern Andes of Antioquia, overseen by Jorge Mira. A forestry engineer by background, Jorge takes a different approach to farming, with a large part of the property dedicated to preserving native forest and sustainable pine plantations.
The coffee grows among native trees, creating a diverse ecosystem and plenty of natural shade. For Jorge, producing great coffee and looking after the land go hand in hand.
He combines that knowledge of the landscape with plenty of experimentation in the coffee itself. Alongside classic varieties like Castillo, Jorge works with coffees such as Pink Bourbon, Typica Mejorado, Sidra and Gesha, using carefully controlled processing to bring out as much character as possible.
Thermal shock, serious flavour
This Rosado goes through a pretty involved washed + thermal shock process.
Only ripe cherries are selected before being floated and oxidised for 24 hours. After dry pulping and another period of oxidation, the coffee is washed at 45°C, creating a thermal shock.
It then ferments for 36 hours with specific yeast at temperatures below 25°C before another wash at just 5°C*to finish and seal the fermentation. Finally, it is slowly dried before being stabilised in a GrainPro-type bag.
There’s a lot going on behind the scenes, but the result is what matters: a ridiculously clean, juicy and complex cup.
The mango and passionfruit bring loads of tropical sweetness, while florals keep things lifted and the strawberry ice cream note adds that creamy, almost nostalgic sweetness.
One we couldn’t leave behind
We’ve had some seriously good coffees through our relationship with Micafe, but this one stopped us in our tracks.
Jorge’s approach to farming, his focus on sustainability and the precision behind the processing all come together beautifully here.
