Colombia’s Tolima region is one of the country’s most celebrated growing areas - and El Indio shows you why. Produced by roughly 175 smallholder families, this naturally processed Caturra delivers a juicy, boozy profile packed with blackberry and cherry sweetness. Funky, bold, and deeply layered, it’s the kind of coffee that stands out on the cupping table and in your morning cup.

 

 

Behind the Process: Natural & Sun-Dried

Ripe cherries are selectively hand-picked, sorted, and sun-dried on raised beds under controlled conditions until they reach an ideal moisture content of 11%. Cofinet’s quality analysts conduct weekly physical and sensory assessments to ensure each lot matches the El Indio profile, helping farms refine consistency year after year.

 

This microlot is 100% Caturra, a natural mutation of Red Bourbon originating in Brazil - known for higher yields and improved disease resistance, without compromising flavour intensity.

 

A Community of Producers

This lot is sourced from two key local associations:

ASOPEP - supporting ~200 farmers through training, environmental practices, youth education, and quality improvement.

ASCI’SP - represents Nasa We’sx Indigenous growers, supporting organic and fair-trade certifications while improving farming standards and quality control.

 

Together, these groups cultivate over 200 hectares of high-altitude land and work to empower producers through education, sustainability, and fair coffee pricing.
