With over 26 years in coffee and a background in chemical engineering, Wilton Benítez is one of Colombia’s most innovative specialty coffee producers.
At Granja Paraíso 92, Wilton operates one of the most advanced coffee processing facilities in Latin America, complete with an on-site microbiology lab, fermentation bioreactors, and quality control systems. His scientific approach allows for precise microbial management and fermentation design, pushing flavour development to extraordinary levels.
This coffee is a showcase of Wilton’s mastery—wildly modern, intensely fruity, and meticulously crafted.
Advanced Washed ProcessThis coffee undergoes an advanced washed process, an elevated and highly controlled evolution of traditional washed fermentation. The goal: preserve washed coffee clarity while unlocking intense, expressive flavour.
The process includes:
Manual harvesting and cherry characterisation
Density and size classification
UV and ozone sterilisation
Thermal water immersion to open the fruit’s pores
Multi-stage anaerobic fermentation with selected microorganisms
Precision hot-and-cold washing
Controlled ecological drying with carefully programmed temperature curves
The result is a coffee that’s clean, bright, and incredibly complex, with flavour intensity often associated with experimental or natural processes—without sacrificing elegance.
